Pumpkin Man Tou
南瓜馒头
Ingredients:
a. 120g pumpkin (cube)
b. 30g water
c. 30g sugar
d. 1 teaspoon instant yeast
e. 250g plain flour
f. a pinch of salt
Steps:
1. Put the pumpkin into simmering basket. Pour in 450g of water into TM bowl. Steam for 15 mins/ Varoma / Speed 1.
2. Take out the soften pumpkin and set aside to cool for 15 minutes.
3. Cool the TM bowl to ensure temperature goes below 37 C. Add in 30g water, sugar, oil and yeast into TM bowl to mix for 30 sec/ 37 C/ speed 1.
4. Add in flour, steamed pumpkin and salt to knead for 2 mins, without Measuring cup.
5. Take out the dough, divide into 16 small balls. Make patterns, then place it in Varoma unit and proof for 20-30 mins.
6. Add 450g water into TM bowl and set up Varoma unit to steam 18 mins / Varoma/ Speed 1.
* To test whether the dough is suitable to steam, put a bit into water. If it floats, then it's time to steam it.
