Pastry Ingredients:
a. 10g sugar
b. 70g salted butter (room temperature)
c. 170g plain flour
d. an egg
Filling Ingredients:
a. 70g sugar
b. 70g water
c. 2 eggs
d. 130g milk
e. 50g vanila extract
f. pinch of salt
Steps:
1. Place sugar into bowl, mill 1 sec/ turbo 2 times.
2. Add pastry ingredients to blend 10 sec/ speed 6.
3. Transfer dough, cling wrap. Rest in refrigerator for 15 minutes.
4. Roll dough into balls, press the ball flat to fit into tart cases (less than 1/4 inch). Then, prick holes with a fork on the bases. Refrigerate again.
5. Pre-heat oven 180 C for 10-15 minutes.
6. For filling, add sugar and water to cook 4 mins/ 37 C/ Speed 1.
7. Add in filling ingredients to mix 20 sec/ speed 3. Pour into pastry.
8. Put the egg tart into oven 180 C for 18 minutes.
